Re-Lyte Piña Colada Fruit Salad

What do you get when you combine two summer favorites into one delicious dish? This yummy Piña Colada Fruit Salad— a juicy and hydrating snack or side that’s perfect for nourishing your body during that end-of-summer heat.

Customer Experience Associate Perla Ruiz shared this Piña Colada Fruit Salad at a recent Campfire Chat, an event where the redmond.mom team gathers around a campfire for good food, friends, and conversation. It was such a big hit, we thought you’d like to try it too!

Ingredients:

  • 1 pineapple
  • 1 cup of pitted cherries
  • 2 cups of unsweetened coconut flakes
  • 1 scoop of Piña Colada Re-Lyte
  • 1 can (13.5 oz.) of coconut milk
  • 8 oz. of creme fraiche

Instructions:

  1. Dice the pineapple and pitted cherries and put them in a bowl.
  2. Add 2 cups of unsweetened coconut flakes.
  3. Put the coconut milk, creme fraiche, and Piña Colada Re-Lyte into a separate bowl and blend them together.
  4. Add the coconut milk mixture to the pineapple, cherries, and coconut, and mix well.
